Sharing a little treat after school is a great way of getting the conversation going and discuss how the day went.  Today I have made healthy and yummy chop chic cookies. Blueberries and strawberries are still in season and I infused some herb tea that will stay in the fridge for a few days until finished. Tea or infusion is a great alternative to fruit juices and sodas.

Recipe

Ingredients

  • 100g natural almonds
  • 100g natural macadamias
  • 50g natural hazelnuts
  • 3 tbs of buckwheat flour
  • 1 egg
  • 3 tbs raw honey
  • 3 tbs coconut oil
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp bicarb soda
  • pinch of salt
  • pinch of ground vanilla
  • 80g choc chips or alternatively raisins

Mix together all nuts to reduce them in a powder, add flour, bicarb, salt and vanilla. Combine well.                                                                                                                             Separately combine together the beaten egg, oil, vinegar and honey.  Add this to the dry mixture,  combine well, it will be a bit sticky.  Incorporate in the choc chips.

Roll about 12 little balls with the palm of your hands, and flatten them a bit with your fingers on the top of a tray lined with baking paper. Bake in your oven at 180ºC for about 10 minutes.

Let them cool down on a rack and enjoy!
